The French toast recipe below is made with almond milk and has no added sugar, but please note that you can substitute this with any type of milk. Ingredients:
1-2 cups of almond milk.
¼ cup sugar or honey
1 ½ tsp vanilla extract
¼ tsp. salt. pinch of ground cloves pinch of ground ginger pinch of cayenne pepper (optional)
1-2 tbsp olive oil butter, for griddle and bread
Directions:
In a small pot over medium-high heat, combine the almond milk with the sugar or honey until it is dissolved.
Add in the salt, nutmeg, cloves, and ginger.
Stir occasionally until the mixture begins to boil. Transfer the mixture to a blender and add the vanilla extract, cayenne pepper, and olive oil. Blend for about 2 minutes or until melted smooth. In a large bowl, whisk together all of the wet ingredients (eggs, milk mixture, and vanilla) with a fork.
Cut your bread into large pieces on a diagonal so it can soak up the mixture.
Layer the bread on a baking sheet, making sure to leave enough room in between each layer. The top layer should be big enough so that the batter can cover it, while the bottom layer should only reach halfway up.
For every 1/4 cup of bread cubes, add 1/4 cup of batter and stir to coat.
Place them on the prepared baking sheet.
Bake in the oven for 8 to 12 minutes or until they are golden brown.
Repeat with the remaining bread cubes, adding a new layer halfway through cooking.
